We really love these Vegan Superfood Protein Balls at our house. When we’re on the go, to playdates or meetups, I like to grab a few of these and take them with us for a little snack. They keep my kiddo happy and filled for hours. I think they’re the perfect food for busy homeschool families like mine.
The best thing about them is they’re so nutritious too! They combine oats, protein powder, almond milk, walnuts, chia seeds and cranberries to make a chewy AND crispy ball. The hint of vanilla and the brown rice syrup and honey give it just enough sweetness that my son thinks these are a real treat!
- 1/2 cup dates
- 1 cup regular oats
- 1.5 scoop vanilla vegan protein powder- boosted*
- 1/4 cup shredded coconut
- 2 tablespoons chia seeds
- 1/2 cup chopped walnuts
- 2 tablespoons brown rice syrup
- 1 tablespoon raw honey
- 2 tablespoons almond milk
- 1/4 cup dried cranberries
Place the dates in warm water for twenty minutes and allow to soften.
In a large bowl, combine oats, protein powder, coconut, chia seeds and walnuts. Mix.
Add in the brown rice syrup and honey and start to combine the ingredients.
Add in the almond milk and mix until everything looks wet.
Finally, fold in the cranberries and mix until combined.
Using your hands, roll the mixture into small balls (about one inch in diameter) and place on a tray lined with parchment paper (Tip: rubbing coconut oil onto your hand prior to doing this makes less of the mixture stick to your hands).
Place the tray into the freezer to set.
Makes 18 balls
* most vegan protein powders (like Vega or Progressive) have additional nutrients added to them, they’re “boosted”. This is great because it means more health benefits for you! It does, however, give the powder a slightly green color.
So, the next time you’re planning your field trip or outing, make a few of these in advance, and pack them to take with you! Or, set these out for your kiddos to munch on while they’re completing their school tasks for the day. Either way – these Vegan Superfood Protein Balls will keep them going!
